You don’t have to use red beans, white will do too, although the effect will be different. Hell, just google “minestrone” and you will see so many variations that will make your eyes pop. Some add zucchini along with cherry tomatoes, some add potatoes, some add peas, kale or even a tablespoon of pesto!

This version is a beautiful minestrone recipe by Gordon Ramsay. I modified the recipe to incorporate the making of chicken stock into the process recipe. As a side effect we have boiled chicken pieces which we take out of the stock, debone, and dump back into the soup. Mmmm!
