These pancakes are one of the easiest to prepare and the are just as tender themselves as the ricotta you put into it.
The trick for making pancakes with blueberries is to stick them into the batter on the uncooked side of the pancake, seconds after you poured the batter onto the pan. Then, when you flip the pancake, the blueberries will cook themselves in on the underside.
