Sharlotka (from Russian шарлотка, literally “a Charlotte-inspired apple cake”) is a Russian apple sponge cake. It is very simple and delicious.
The recipe is quite simple. Just beat the following, adding them one by one into the bowl:
- 3 eggs
- 1 cup sugar (beat severely)
- 1 cup flour (beat less)
- 1-2 tbs yogurt or sour cream or something diary
- a bit more flour to compensate moisture from yogurt.
- lemon zest
- 1/2 tsp soda and squeeze the lemon over it. See the bubbles? Good, now stir that in.
Layer 1/3 batter into a pie tray. Layer chopped up apples. Top with the remaining batter to cover all apples. Bake on 375 F for 30 min. Or 35. Depends. Stick a toothpick in the middle to ensure it’s cooked through.
The secret to good Sharlotka is that little bit of soda with lemon. The lemon zest kills the atrocious smell of burning eggs. And how much flour you use will control the moisture of the cake. You want to nail it perfectly of course!
Sprinkling of sugar on top with the letters “I love you, Lucie!” is optional.
